A Good Healthy Monday To Ya - Oatmeal Breakfast Bites

Hello Strangers....

Yea, yea, yea. I know. I never write on here. I have another personal blog I never write on either. Soon I'll be getting a work blog and I WILL be writing there. One out of three won't be bad :)

I want to write more on here. I just always feel I never have anything worth writing about!

Today however - I made some really good muffins for my new work fam (I got a new job this year).

They are Healthy Gluten Free Oatmeal Bites. I thought they were great! I hope you enjoy!!!



Ingredients:
1 egg
1 1/2 tsp vanilla extract
1 cup unsweetened applesauce
1 ripe banana (mashed)
1/4 cup honey (*i didn't have enough so I added one pkt of stevia to a little bit of honey*)
1/2 cup almond milk (or milk of your choice)
2 1/2 cups oats (I use regular oats because I don't get sick with them. If you have Celaic or are GF and do .. just use GF Oats)
1 tbsp cinnamon
1 1/2 tsp baking powder
1/2 tsp salt
2 tbsp chia seeds (I buy Organic Nutiva)

Toppings of your choice. (I used dark chocolate chips .. 4 to be exact. 2 inside. 2 outside)

Directions: 
Preheat oven to 350°.

Mix wet ingredients together in a large bowl: egg, vanilla, applesauce, banana, honey, milk.
Combine dry ingredients in a small bowl: oats, cinnamon, baking powder, salt, chia seeds.
Slowly stir the dry ingredients into the wet.

Line muffin pan with paper liners 
Spoon mixture into the cups so that they are a 1/3 full.  Add a few toppings then cover completely with more of the mixture.  Add more toppings to the top of each muffin.  
This mixture made 12 full muffins.

Bake 20-25 minutes (until a toothpick comes out clean).
